About Alpha s1 Casein
Alpha s1 Casein is a type of milk protein which is very beneficial for cheesemaking. It helps the rennet set up faster and makes a firmer curd. When a goat has any combination of A/A, A/B, or B/B of Alpha s1 Casein it means that the milk will be excellent for cheesemaking. Having one of these types of Casein can increase cheese yields by 15%.
Our cheese yields are huge by commercial standards due to our goats having this “cheese making” protein, and the milk is still great for simply drinking and cooking with. It's the best of both worlds!
Another benefit of goats milk is that it has the A2 Beta Casein gene which is healthier than the A1 Beta Casein found in most commercial cow milk.
